While no conscientious food safety leader would set out to negatively impact their own program, the high attention to detail and constant organizational discipline required for an effective testing program leave some room for error. If any small step is not well designed and expertly executed, then your entire program may be worthless - or worse - may cost you millions due to a recall or human illnesses. One factor in particular that manufacturers need to focus their attention on is the reliability of their pathogen sampling and compositing (pooling) strategy, as well as the applicability of their pathogen method. Specifically, what test portion should be taken to ensure accurate results, and what method should be used when testing for the presence of pathogens?

Later for Letterman: FSIS Releases 10-Point Salmonella Action Plan

shutterstock_140335345It’s a given that the Food Safety and Inspection Service’s (FSIS) new 10-point action plan to address Salmonella contamination in meat and poultry products won’t get anywhere near David Letterman’s “Top 10 List.” But like the late night host, whose candor has won him legions of fans and critics alike, FSIS is not mincing words in its efforts to address the estimated 1.3 million illnesses caused annually by Salmonella.

In a prepared statement, FSIS Under Secretary for Food Safety Elisabeth Hagen said, “Far too many Americans are sickened by Salmonella every year. The aggressive and comprehensive steps detailed in the Salmonella Action Plan will protect consumers by making meat and poultry products safer.”
